Sweet Annie, Artemisia annua, is harvested when the floral buds are at their maximum size (we call them beads) but before they actually open. It is very important
not to wait too long. If a few of the plants open and show that characteristic yellow color (pollen), then you know you must pick it immediately and those plants
that have open will not dry as well.
The other consideration, is if you do not pick it at all, you will have Sweet Annie everywhere ... I mean everywhere!
