If you pick cattails too late, when they are fat, they will burst as they dry and go to seed. Here, in zone 5b, the best time to pick is around the end of June.
You want to pick them when they are quite thin. To dry, simply lay them on a few sheets of newspaper. They will last for many years.

I pick cattails at any time -then dry on paper in my garage and when dry [about 2-3 weeks] spray a couple light coats of matte sealer on the cattails ,Spray varnish
works also .I do it every year and never had one burst.We have an abundant supply here
