Harvesting/drying bearded wheat

My husband and I own a farm in Alberta, Canada. We planted a nice size plot of black bearded wheat in the spring. Now that it's maturing, we wonder when to harvest
(wait until all brown, or can/should it be somewhat green) and is drying necessary...if so for how long?

Most people prefer the black bearded wheat to be fully tan (no green). This is also nice in that you will obtain the darkest awns by waiting for the stalks to bleach
out. Do not wait too long thought, you do not want the seed heads to pop open.
Yes, it needs to be dried. We hang ours in our barns but you could lay it down just make sure it gets lots of air (i.e. do not stack it). It can take awhile for
it to dry, really depends on you drying facility and the weather. Air movement is critical, if you have it in a warm area with not a lot of air circulation the wheat
will rot and alter the 'clean' appearance. Hanging it aids in the drying obviously by allowing as much air around the bunch as possible.
