My daughter dried some of the roses from the first bunch her fiance gave her. How do we protect these so that we can use them in her wedding bouquet?

The most important part has already taken place ... the drying. If she ended up with a rose of good structure and color, good job!
Until the wedding, I would store them in complete darkness. Ideally, I would hang them in a cardboard box that is unsealed. Hanging will allow the shape to be
unaltered in storage; darkness will help maintain all the color and you want to keep the box unsealed so the roses can 'breath'. Put them in an environment that
is not to extreme ... not high humidity or super dry.
